It seems Winter has not so subtly crept its way into our lives. However, that doesn’t mean the rich, delicious flavours of Autumn’s harvest have been forgotten. For us, nothing reminds us more of Autumn than Scottish apples.
Our commitment to fresh, high quality ingredients is reflected in what we choose to use in our seasonal beers, and so it made sense to take full advantage of the apples that were right on our doorstep. We acquired fresh, pressed Scottish apple juice from our friends up in Dunbar at Thistly Cross Cider as the base for this latest seasonal special.
First brewed in our old brewery in Kelso, the apple juice was fermented with Champagne yeast to create what was essentially a traditional dry cider, whilst the beer was brewed as a saison. The two were blended and left to mingle and condition for one month. The result is something rather special. We’re fairly certain you won’t have tried anything quite like it, and will be surprised by the complex flavour profiles Gavin and the brewers have created. Classic saison tartness is prominent on the palate, along with that classic Belgian character to the body, but the fermented apple juice elevates it and gives it an acidity almost akin to pineapple juice. The last lingering taste in the finish is rich with gentle warm spice.
