What would a cowboy out in the Wild West drink? That’s the question Gavin found himself asking back in the early days in our old brewery in Kelso. The answer, probably something smoky and something with rye, and after a night watching Unforgiven, this smoked red rye ale was created.
You can almost picture Clint Eastwood popping the cap off and taking a swig of this incredibly balanced ale. The smoky aroma and flavour from the beech is more a smoky bacon than big dark smoke, which whilst unexpected blends incredibly well with the spiciness from the rye giving a tip of the hat to the cowboy’s favourite rye whiskey. A hint of sweetness cuts through from the crystal malt, which rides out into a warm finish.
Different times of year call for different kinds of beer, and with that in mind Unforgiven is brewed differently depending on the season. In Summer at the height of BBQ season, it’s brewed to have a lighter body and even the colour is lighter. In Winter, the body is a bit fuller with a darker, slightly thicker quality to it. The hops used vary depending on what is in season that will give the beer that spicy kick our brewers are after.
